Tủy heo có rất nhiều chất dinh dưỡng bên trong sẽ làm đổi mới vị giác cho món trứng chiên thông thường. Món này có ưu điểm ở chỗ không tốn quá nhiều thời gian nhưng lại vẫn cung cấp đủ dinh dưỡng cho bữa cơm của gia đình.
Tủy heo rửa sạch với rượu trắng. Ướp với hành lá, bột nêm, bột ngọt, tiêu. Trứng đập ra bát đánh tan, sau đó bỏ thêm nước mắm, sốt mayonnaise đánh đều lên.
Cho dầu ăn vào chảo, phi tỏi vàng. Bỏ tủy vào đảo đều cho chín khoảng 5 phút. Tiếp tục đổ trứng vào tráng đều chảo. Tủy dàn đều. Để lửa vừa. Đợi một mặt chín thì tiếp tục lật lại mặt kia cho vàng đều.
Khi trứng vàng 2 mặt thì tắt bếp, bày ra dĩa. Ăn với cơm nóng và một ít nước tương dầm ớt thì không còn gì tuyệt vời hơn luôn.
