Trộn bột agar với đường cát, hòa tan cùng nước dừa và nước lọc (khoảng 200l) là được, ngâm khoảng 10 phút rồi bắc lên bếp nấu. Lá dứa rửa sạch, cuộn lại rồi cho vào nấu cùng nước agar để tạo mùi thơm.
Dùng nắp chai bia để cạo cơm dừa ra thành từng sợi mỏng dài, rồi chần sơ qua nước nóng 2 phút (để bớt lượng dầu dừa), vớt ra để ráo.
Khi nước thạch agar sôi lên thì vớt sạch bọt để thạch trong, khuấy liên tục để đường và bột thạch tan hoàn toàn. Vớt bỏ lá dứa rồi đổ thạch rau câu vào khuôn.
Tiếp theo đó, bạn cho cơm dừa vào thạch rau câu, trộn đều rồi để nguội. Cất thạch vào ngăn mát tủ lạnh, khi ăn thì cắt ra thành từng miếng vừa ăn là được.
