Trứng chiên hàu là món ăn đặc trưng trong ẩm thực Singapore, đây là món ăn dễ chế biến và lại có giá trị dinh dưỡng cao nên được nhiều người yêu thích, thịt hàu chứa nhiều khoáng chất có tác dụng hạ huyết áp, lợi tiểu, giải độc và hỗ trợ chữa đau dạ dày và nhiều công dụng khác.
Rửa sạch nhiều lần với nước để bớt mặn thịt hàu, lọc bỏ vỏ nếu còn sót. Để hàu thật ráo nước. Rửa sạch thái nhỏ phần lá xanh của hành lá. Nêm trứng với hành lá vừa thái, 2gr tiêu xay, 1gr đường, 1gr hạt nêm.
Đập giập đầu hành, thái nhỏ và phi thơm. Khi hành đã thơm và ngả vàng thì cho thịt hàu vào đảo nhanh tay cho vừa săn. Khi thịt hàu vừa săn thì đánh tan trứng để trộn đều các gia vị và cho vào chảo với lửa to. Đậy nắp chảo trứng và giảm lửa, chờ khoảng 2 phút sau thì trứng chín. Pha 50ml nước tương, 20ml nước lọc, 10ml giấm ăn, 5gr ớt sa tế và 2gr đường để làm nước chấm.
Dùng trứng chiên hàu cùng cơm nóng. Thịt hàu tươi ngọt béo mượt cùng trứng chiên xốp phồng, hành phi thơm thơm ăn cùng cơm nóng và chan nước chấm chua cay quả thật là món ăn giản dị mà vô cùng dậy vị đưa cơm.
